Featured at Oysterfest 2015 will be a selection of Chablis from Domaine Sébastien Dampt and Marcel et Blanche Fèvre. New this year will be the U.S. debut of Blanc du Grappin, A.O.C. Mâcon Villages, made by Andrew Nielsen of Le Grappin.

Marcel et Blanche Fèvre
Marcel et Blanche Fèvre wines are an homage to Marcel Fèvre (b. 1876) – a visionary who developed the Fèvre estate with passion in the vineyards; a philosophy that has been passed down to grandson Gilles Fèvre and multi award-winning winemaker Nathalie Fèvre. Excellent offerings from Chablis A.O.C. to Grand Cru.

Vineyards situation
25 year old Chardonnay vines on limestone soils from the plains below the town of Péronne, just outside the Vire-Clessé appellation, and neighbour to Uchizy, and so arguably one of the best terroirs classified only as AOC Mâcon-villages.
Wine making
The grapes were pressed without SO2 and allowed to oxidize for 48 hours before being racked with fine lees to tank and old barrels (50:50) for a native fermentation. The wine spent 6 months on lees before being racked and gently fined and filtered before packaged in KeyKeg to preserve freshness. A small amount of CO2 has been left in the wine to both brighten and protect the wine and allow me to reduce the use of SO2 as a preservative.
