Chablis 1er Cru “Fourchaume”, one of the most noted Chablis 1er crus, originates from vineyards situated on long slopes facing the sunrise, allowing rapid soil warm up which aids in quality and maturing of the grapes. The Fourchaume vineyard is situated on the right bank of the River Serein. The grapes grow in soil from the Jurassic epoch, or more precisely the Kimmeridgean age (150 million years ago). Deposits of tiny oysters can be found in the rock, which were left by the shallow sea that once covered this territory.
Moderate production methods with emphasis on limiting vine intervention to allow the authenticity of the soil to express itself naturally and fully. Environmental friendly techniques are used including fertilization according to soil analysis and no use of insecticide or acaricide.
Vinified in steel tanks. The simplest methods possible are used, in order to let the minerality and the complexity of Fourchaume shine through.
